Shojin ryori (精進料理) is a type of traditional Buddhist cuisine that is plant based, and served at both temples and traditional shojin ryori restaurants. It usually has multiple courses of dishes with mild flavors that are prepared with local and seasonal vegetables.

"Gyoshintei" sits within a historical site called the Nikko Fudoson. The restaurant was named after "Gyoshinbo", an ancient site in Mt. Nikko which was the training grounds for the monks. "Gyoshintei" which specializes in Shojin (vegetarian) cuisine inherited the 1200 year history of Mt. Nikko and is the only restaurant in Nikko which practices the traditional and authentic Shojin cooking method of "Shijo Shinryu"
